Gluten free Recipes with Nihkan Green Banana Flour

“Useful Tips”

1. Green banana flour is simply the raw banana dried and grounded with no additives. It doesn’t taste like ripe bananas.

2. Banana flour absorbs more water than wheat flour, due to its high starch content, which results in a higher water absorption capacity. So if you are using it as a replacement in a recipe for grain flours, recommendations are to use 25-30% less.

3. You can mix banana flour with other gluten free flours like almond/coconut /millet flours for better taste & texture.

4.  In Baking with Banana flour, use thick sticky batter, rather than a dough. So, add additional water if required. 

For serving size – 2

Ingredients:
  • 1/2 cup NihKan Green Banana flour
  • 1/4 cup rice flour
  • 1/4 cup millet flour
  • 1 tsp Baking powder
  • 1 cup milk/substitutes
  • 1/2 tsp Salt
  • 1tsp Olive oil
  • 1tsp vanilla essence
  • 1 tbsp brown sugar/maple syrup
Instructions:
  1. Combine all ingredients together and set the batter aside for 2 minutes.  Meanwhile, heat a large cast iron or nonstick skillet over medium-high heat.
  2. Add butter to the pan and swirl to coat.
  3. Add 1-tablespoon of the batter to the pan. Cook on the first side until bubbles appear on the surface, the edges begin to look dry, and the bottoms are golden-brown.
  4. Flip the pancakes. Cook until the second sides are golden-brown, 2 to 3 minutes more. Transfer to a warm oven or plate. Pour your favourite toppings like chocolate sauce or honey and enjoy with fresh fruits.  💚😊

 

Serving Size -approx 450 g bread loaf

Ingredients:
  • 2 1/2 cups NihKan Green Banana Flour 
  • 1 tbsp xanthum gum
  • 3 large eggs or 1 cup flax seeds powder
  • 1 1/2 tsp salt
  • 50 g butter or oil 
  • 1 sachet dry yeast (7g)
  • 3 tbsp sugar
  • warm water
  • 2 tbsp olive oil for greasing baking tin
Instructions:
  1. Gather all dry ingredients in powered mixer, flour, xanthum gum, salt and mix very well so they are all very well combined.
  2. Take sugar and add separately to warm water stir well and add yeast set aside to activate.
  3. Now add butter/oil and eggs to dry mix and continue to mix very well on high speed so all ingredients are combined very well. It is imperative that these steps are carried out correctly as this will guarantee the best results.
  4. While the product is mixing slowly add the water yeast solution until all ingredients combine. Continue to mix on high speed until mixture becomes a lighter creamy batter approx. 1-2 mins in a processor.
  5. At this stage you should have a thick batter now. Empty into bread tin that has been greased. Set aside for over 1 hour to rise. The mixture should double. You can now paint top with butter and sprinkle seeds of your choice like pumpkin, sunflower, flaxseed etc.
  6. Place in oven for 35-40 mins on 180C until cooked use a skewer to check.
 

Serving Size -approx 400 g bread loaf

Ingredients:
  • 3 very ripe bananas, peeled
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • ¼  teaspoon salt
  • 2 eggs, beaten
  • ¾ cup sugar (½  cup if you prefer a less sweet bread)
  • 1 teaspoon vanilla extract
  • 1 teaspoon vinegar
  • 1 ¼ cup NIHKAN banana flour 
  • 1/3 cup walnut (optional)
Instructions:
  1. Preheat the oven to  180C. Butter a 4×8- inch loaf pan.
  2. In a mixing bowl, mash the ripe banana with a fork or masher until bananas no longer have lumps.Stir the melted butter into the mashed bananas.Whisk the eggs.Stir in beaten eggs, the sugar, vanilla extract, vinegar, and walnuts.
  3. Combine baking soda and salt to the flour. Now add flour mixture to the banana mixture. Whisk only until well combined.
  4. Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 180C.Remove from oven and let the banana bread cool in the pan for a few minutes.Remove from pan. Slice and serve.

Serving Size -approx 500 g cake

Ingredients:
  • 1 cup NihKan Green Banana Flour & ½ cup oats /almond flour/buckwheat flour or any other Gluten free Flour. 
  • 1/2 cup cocoa powder
  • 1 1/2 cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup oil or butter
  • 2 large eggs or 1/2 cup flaxseeds powder (in case of vegan)
  • 1 tsp vanilla extract
  • ½ cup chocolates chips
Instructions:
  1. In a large mixing bowl, whisk together all the flours, cocoa powder, granulated sugar, baking powder, baking soda and salt.
  2. Take another bowl, mix in the oil, eggs, and vanilla essence. Pour this into cake mix stirring until a uniform batter is formed.
  3. Sprinkle chocolate chips uniformly.
  4. Preheat oven to 180 degrees C.
  5. Bake for 30-35 minutes.
  6. Allow cake to cool for 5 minutes before transferring it to a cooling rack to cool completely.
 

For serving size – 10-12 cookies

Ingredients:
  • 1 cup NihKan Green Banana Flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar      
  • 1 tsp  ginger powder
  • 1/2 tsp cinnamon powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup oil or butter
  • 2 large eggs or 1/2 cup milk 
  • 1 tsp vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 3/4 cup powdered sugar
Instructions:
  1. In a large mixing bowl, whisk together the banana flour, cocoa powder, granulated sugar, ginger powder & cinnamon powder, baking powder, and salt. Mix in the oil, eggs, and vanilla essence, stirring until a uniform batter form. Stir in the chocolate chips 
  2. Place cookie dough in the refrigerator for 2 hours (or overnight) until completely chilled through.
  3. Preheat oven to 180 degrees C.
  4. Place powdered sugar in a small bowl. Set aside.
  5. Roll chilled cookie dough into 1-inch balls. Drop cookie dough balls into the powdered sugar and coat evenly on all sides. Place balls at least 2-inches apart onto a cookie sheet.
  6. Bake for 10-13 minutes, or until cookies have a crackled appearance. Allow cookies to cool for 5 minutes before transferring them to a cooling rack to cool completely.

For serving size – 1 portion

Ingredients:
  • NihKan’s Banana Flour – 2 tbsp
  • Jaggery powder (or sugar) – 1tbsp
  • Milk & water mix 1 cup
  • Ghee 1tsp (optional)
Instructions:
  1. Take 2 tbsp of Nihkan’s banana flour and add it to a thick bottomed pan. Add 1 cup mix of water & milk to it until it dissolves.
  2. Cook on stove for 5 minutes or until the raw banana powder gets cooked well. Stir it continuously otherwise it gets to stick to the bottom.
  3. Once the raw banana powder is cooked, add powdered jaggery or sugar.
  4. Switch off the flame and add ghee & serve to your baby.

Ideal for baby’s first food. 

For serving size – 1 Glass

Ingredients:
  • NihKan’s Banana Flour – 2 tbsp
  • Powdered palm Jaggery or jaggery – 1 tbsp
  • Water – 3/4 cup
  • Milk – 1 cup
  • Honey – 1 tbsp
Instructions:
  1. Take 2 tbsp of green banana flour and add it to a thick bottomed pan. Add 3/4 cup of water to it.
  2. Mix well with a whisk. Cook everything in a low flame for 5 minutes or until the raw banana powder gets cooked well. Stir it continuously otherwise it gets to stick to the bottom.
  3. Once it is cooked, add powdered palm jaggery or palm jaggery syrup. Mix well and cook further for 3 minutes. Switch off the flame once done and cool it down.
  4. Transfer the cooked batter to a blender and add milk at this stage.
  5. Then add honey to it. Blend everything until smooth.

Can be taken during fasting as well. Ideal for babies & toddlers.

For serving size – 3-4 portions

Ingredients:
  • 1cup NihKan Green Banana flour
  • 1/4th  tsp Baking soda
  • 1/4th  tsp baking powder
  • 1 cup Warm water
  • 1 tsp sesame seeds
  • 1 tsp Salt
  • 1tbsp Olive oil
Instructions:
  1. Combine all ingredients in a bowl and mix until well-combined.
  2. Let dough rest for five minutes.
  3. Split dough into eight equal balls and roll out each into circles.
  4. Cut each circle into 4 triangles (a pizza cutter is handy for this)
  5. Place on a baking dish
  6. Bake for 10 minutes, at 180 degree celsius. Remove from oven and turn over. Bake for another 5 minutes. They will crisp as they cool.
  7. Transfer to a cooling rack and store in an airtight container.

For serving size – 1 portion

Ingredients:

 

Pizza Base – 

  • 1/2tsp dry yeast + 1/2 tsp sugar + 1tbsp lukewarm water 
  • 1cup Nihkan Banana flour
  • 1/4 tsp baking powder
  • 1tbsp oil
  • 1 cup Warm water

Pizza Toppings – 

  • 1 tsp tomato based pizza sauce
  • 1 Cheese cube
  • Vegetables of your choice – bell peppers, onions, sweet corns
  • 1 tsp Salt
  • Pepper
  • Oregano
  • Chilli flakes
Instructions:
  1. Use yeast, sugar & lukewarm water to activate the yeast. 
  2. Take banana flour, add salt, baking soda, baking powder, salt. Add the activated yeast and little warm water to the mixture and knead a soft dough.
  3. Now, with your hands on a rolling board, make a flat round bread. Wait for 30 mins for batter to rise. 
  4. Bake the pizza base for 15 mins @ 220 degree C.
  5. Take it out and Put pizza sauce, toppings of your choice and shredded cheese.
  6. Add little salt, pepper, oregano and chilli flakes.
  7. Bake again for 10 minutes @180 Degree Celsius

For serving size – 4 portions

Ingredients:
  • 1 cup of sliced potatoes 
  • 1/2 cup Nihkan Banana Flour
  • 1/2 teaspoon ground Cumin
  • 1/2 teaspoon red chilli powder
  • 1 teaspoon Salt
  • Oil for frying
Instructions:
  1. In a bowl, whisk together NihKan Banana flour, cumin, red chilli, salt and a little water to make a batter which is slightly thinner in consistency. Add 1tsp of hot oil. 
  2. Dip individual pieces of potatoes in batter and put them in the hot oil, making sure not to overcrowd the pan or the temperature of the oil will come down drastically. Fry the potatoes on medium high heat till they are golden brown and crisp.
  3. Remove them on a tissue lined plate and serve immediately.

Banana flour can be used as a batter for any vegetable / meat for frying.

For thickening soups & gravies :
Ingredients:
  • 2 tbsp Nihkan Banana Flour
  • Water
Instructions:
  1. In a bowl, whisk together NihKan Banana flour with 1/2 cup water , make a batter which is slightly thinner in consistency.
  2. Add this slurry in soups or Chinese gravies to thicken them.
Ideal replacement for corn starch/corn flour. 
For making pasta creamy white sauces :
Ingredients:
  • 1/2 cup Nihkan Banana Flour
  • Water + Milk 1 cup
  • 2tbsp oil
  • salt, pepper & sugar – 1tsp
  • 1/2 cup grated cheese
Instructions:
  1. Heat a pan, add oil, add Banana flour and roast for 1 min.
  2. Then add milk & water mix and stirr continuously so that no lumps are formed. You can use blender in case there are lumps.
  3. Add salt, pepper, sugar & grated cheese to make creamy white sauce.

Ideal replacement for all purpose flour.
