Millet Mix Vegetable Soup Made with Sprouted Finger Millet Flour

Ingredients:

1 tbsp Nihkan’s Sprouted Finger Millet Flour

1 cup chopped mixed vegetables (carrot, beans, peas, corn, etc.)

½ tsp grated ginger

½ tsp black pepper powder
-
½ tsp cumin seeds
-
Salt to taste

1 tsp oil or ghee
-
3 cups water

Coriander leaves for garnish
Directions:

In a deep pan, heat oil or ghee and add cumin seeds.

Add grated ginger and sauté for a few seconds.

Add chopped vegetables and cook for 2–3 minutes.

In a separate bowl, mix sprouted finger millet flour with a little water to make a lump-free slurry.

Add the slurry to the pan along with water and stir continuously to avoid lumps.

Add salt, pepper, and bring the soup to a gentle boil.

Simmer for 5–6 minutes until vegetables are tender and soup thickens slightly.

Garnish with chopped coriander and serve hot.
