Millet Mix Vegetable Soup Made with Sprouted Finger Millet Flour

This comforting and nourishing Millet Mix Vegetable Soup is crafted using Nihkan’s Sprouted Finger Millet Flour, delivering a warm bowl full of essential nutrients and flavor. It’s a hearty mix of seasonal vegetables, spices, and the goodness of sprouted ragi (finger millet) that makes it ideal for light meals, detox days, or as a healthy starter.

Ingredients:

  • 1 tbsp Nihkan’s Sprouted Finger Millet Flour

  • 1 cup chopped mixed vegetables (carrot, beans, peas, corn, etc.)

  • ½ tsp grated ginger

  • ½ tsp black pepper powder

  • ½ tsp cumin seeds

  • Salt to taste

  • 1 tsp oil or ghee

  • 3 cups water

  • Coriander leaves for garnish

Directions:

  1. In a deep pan, heat oil or ghee and add cumin seeds.

  2. Add grated ginger and sauté for a few seconds.

  3. Add chopped vegetables and cook for 2–3 minutes.

  4. In a separate bowl, mix sprouted finger millet flour with a little water to make a lump-free slurry.

  5. Add the slurry to the pan along with water and stir continuously to avoid lumps.

  6. Add salt, pepper, and bring the soup to a gentle boil.

  7. Simmer for 5–6 minutes until vegetables are tender and soup thickens slightly.

  8. Garnish with chopped coriander and serve hot.
