Chocolate Walnut Millet Brownies with Sprouted Finger Millet Flour

Ingredients:

¾ cup Nihkan’s Sprouted Finger Millet Flour

½ cup jaggery powder or coconut sugar

¼ cup unsweetened cocoa powder

½ tsp baking powder
-
A pinch of salt

¼ cup coconut oil or melted butter
-
1 tsp vanilla extract
-
1 tbsp apple cider vinegar or lemon juice
-
½ cup plant-based milk (almond or soy milk)

¼ cup chopped walnuts

Optional: 2 tbsp dark chocolate chips for topping
Directions:

Preheat oven to 180°C and line a square baking pan with parchment paper.

In a mixing bowl, sift together finger millet flour, cocoa powder, baking powder, and salt.

In another bowl, whisk together jaggery, oil, vanilla extract, vinegar, and plant-based milk.

Combine wet and dry ingredients until a smooth batter forms. Fold in walnuts.

Pour into the prepared pan and top with chocolate chips (if using).

Bake for 20–25 minutes or until the top is firm and a skewer comes out with moist crumbs.
