Chocolate Walnut Millet Brownies with Sprouted Finger Millet Flour

Indulge in a guilt-free dessert with these Chocolate Walnut Millet Brownies made using Nihkan’s Sprouted Finger Millet Flour. These brownies are rich, fudgy, and naturally gluten-free. Packed with the goodness of millets and the crunch of walnuts, they make for a wholesome and satisfying treat for both kids and adults.

Ingredients:

  • ¾ cup Nihkan’s Sprouted Finger Millet Flour

  • ½ cup jaggery powder or coconut sugar

  • ¼ cup unsweetened cocoa powder

  • ½ tsp baking powder

  • A pinch of salt

  • ¼ cup coconut oil or melted butter

  • 1 tsp vanilla extract

  • 1 tbsp apple cider vinegar or lemon juice

  • ½ cup plant-based milk (almond or soy milk)

  • ¼ cup chopped walnuts

  • Optional: 2 tbsp dark chocolate chips for topping

Directions:

  1. Preheat oven to 180°C and line a square baking pan with parchment paper.

  2. In a mixing bowl, sift together finger millet flour, cocoa powder, baking powder, and salt.

  3. In another bowl, whisk together jaggery, oil, vanilla extract, vinegar, and plant-based milk.

  4. Combine wet and dry ingredients until a smooth batter forms. Fold in walnuts.

  5. Pour into the prepared pan and top with chocolate chips (if using).

  6. Bake for 20–25 minutes or until the top is firm and a skewer comes out with moist crumbs.

  7. Let cool completely before slicing into squares.
