Ingredients:

½ cup Nihkan’s Sprouted Super Millet Mix Flour

½ cup Nihkan’s Green Banana Flour

1 cup cooked and pureed beetroot
-
¾ cup seedless dates (soaked in warm water)

½ cup almond milk or any plant-based milk
-
¼ cup oil (cold-pressed or coconut oil)

1 tsp vanilla essence
-
½ tsp cinnamon powder
-
1 tsp baking powder
-
½ tsp baking soda
-
A pinch of salt

1 tbsp lemon juice or apple cider vinegar
Directions:

Preheat the oven to 180°C (350°F). Grease a loaf pan or line with parchment paper.

Blend soaked dates with almond milk to form a smooth paste.

In a mixing bowl, combine the millet flour, green banana flour, cinnamon, baking powder, baking soda, and salt.

Add in beetroot puree, date mixture, oil, and vanilla essence. Mix well.

Stir in lemon juice and quickly pour the batter into the prepared loaf pan.

Bake for 30–35 minutes or until a toothpick inserted comes out clean.
