Enjoy soft, fudgy muffins studded with dark chocolate chunks—made entirely with Nihkan’s Millets Baking Mix for a gluten‑free, eggless treat. These Chocolate Chunk Millet Muffins come together quickly and make a perfect breakfast, snack, or dessert.

Ingredients:

  • 1 cup Nihkan Millets Baking Mix

  • ¼ cup neutral oil (coconut or vegetable)

  • 1/3 cup granulated brown sugar

  • ¼ cup unsweetened cocoa powder

  • ½ tsp salt

  • 1/3 cup buttermilk*

  • 2 tsp apple cider vinegar (to make buttermilk)

  • ½ tsp vanilla extract

  • ¼ cup hot milk (or extra buttermilk)

  • ½ cup dark chocolate chunks

*To make buttermilk: stir 2 tsp vinegar into 1/3 cup milk or plant‑based milk and let sit 5 minutes.

Directions:

  1. Preheat oven to 180 °C (350 °F). Line a 6‑cup muffin tin or grease wells.

  2. In a bowl, whisk oil, brown sugar, buttermilk, vinegar, vanilla, and hot milk until smooth.

  3. Add the millets baking mix, cocoa, and salt. Stir gently until just combined.

  4. Fold in chocolate chunks. Batter should be thick but pourable—add a splash more milk if needed.

  5. Divide batter evenly into muffin cups. Top with extra chocolate chunks.

  6. Bake 25–30 minutes, until a toothpick comes out with moist crumbs. Cool 5 minutes, then transfer to a rack.
