Millet Truffle Cake Made with All Purpose Millet Mix

This decadent Millet Truffle Cake is a fusion of indulgence and health. Crafted using Nihkan’s All Purpose Millet Mix, it is a wholesome, gluten-free alternative to your favorite chocolate truffle dessert. Perfect for celebrations or guilt-free indulgence, this cake is soft, moist, and rich in flavor.

Ingredients:

  • 1½ cups Nihkan’s All Purpose Millet Mix

  • ½ tsp baking soda

  • 1 tsp baking powder

  • 3 tbsp cocoa powder

  • ½ cup coconut sugar or jaggery powder

  • ¼ tsp salt

  • ¼ cup oil or melted butter

  • 1 cup almond or dairy milk

  • 1 tsp apple cider vinegar or lemon juice

  • ½ tsp vanilla extract

  • Optional: Dark chocolate ganache (for topping)

Directions:

  1. Preheat oven to 180°C and grease a cake tin.

  2. In a bowl, mix all dry ingredients: millet mix, baking soda, baking powder, cocoa powder, salt, and sweetener.

  3. Add wet ingredients: milk, vinegar, oil, and vanilla extract.

  4. Mix well to form a smooth batter.

  5. Pour into the cake tin and bake for 30–35 minutes or until a toothpick comes out clean.

  6. Let the cake cool and top with dark chocolate ganache for a truffle-like finish.

  7. Slice and serve.
