Ingredients:

1½ cups Nihkan’s Millets Baking Mix

¼ cup cocoa powder

½ cup jaggery powder
-
½ tsp baking soda
-
1 tsp baking powder
-
1 tsp vanilla essence
-
¼ cup oil (coconut or any neutral oil)

¾ cup almond milk (or any plant-based milk)

2 tbsp vinegar or lemon juice

¼ cup vegan dark chocolate chips (optional)
Directions:

Preheat oven to 180°C (350°F). Line a muffin tray with paper liners or grease it well.

In a mixing bowl, combine all dry ingredients: millets baking mix, cocoa powder, jaggery, baking soda, and baking powder.

Add vanilla essence, oil, almond milk, and vinegar. Mix to form a smooth batter.

Fold in the chocolate chips if using.

Pour batter into muffin cups, filling each about ¾ full.
