Vegan Chocolate Millet Muffins Made with Millets Baking Mix

Ingredients:

  • 1½ cups Nihkan’s Millets Baking Mix

  • ¼ cup cocoa powder

  • ½ cup jaggery powder

  • ½ tsp baking soda

  • 1 tsp baking powder

  • 1 tsp vanilla essence

  • ¼ cup oil (coconut or any neutral oil)

  • ¾ cup almond milk (or any plant-based milk)

  • 2 tbsp vinegar or lemon juice

  • ¼ cup vegan dark chocolate chips (optional)

Directions:

  1. Preheat oven to 180°C (350°F). Line a muffin tray with paper liners or grease it well.

  2. In a mixing bowl, combine all dry ingredients: millets baking mix, cocoa powder, jaggery, baking soda, and baking powder.

  3. Add vanilla essence, oil, almond milk, and vinegar. Mix to form a smooth batter.

  4. Fold in the chocolate chips if using.

  5. Pour batter into muffin cups, filling each about ¾ full.

  6. Bake for 20–25 minutes or until a toothpick comes out clean.

  7. Cool on a wire rack and enjoy!
