Fuel your day with these Millet Dark Chocolate Energy Bars crafted from Nihkan’s Sprouted Finger Millet Flour, rich dark chocolate, and juicy dried berries. Naturally gluten‑free and vegan, they pack a punch of fiber, antioxidants, and healthy fats—perfect for breakfast on‑the‑go or post‑workout snacking.

Ingredients:

  • ¾ cup (80 g) Nihkan Sprouted Finger Millet Flour

  • 100 g dark chocolate (70% cocoa or higher)

  • 50 g powdered jaggery (or coconut sugar)

  • 2 Tbsp neutral oil (coconut or vegetable)

  • 2 Tbsp dried cranberries

  • 2 Tbsp dried blueberries

  • 2 Tbsp chopped walnuts (optional)

Directions:

  1. Prep Tray: Lightly grease a small rectangular tray or pan.

  2. Melt Chocolate: In a double‑boiler or heatproof bowl over simmering water, melt the dark chocolate until smooth. Set aside to cool slightly.

  3. Roast Millet Flour: Dry‑roast finger millet flour in a skillet over low heat for 5–7 minutes, until the raw aroma disappears. Stir in the oil and roast 2–3 more minutes.

  4. Combine: Pour the roasted flour into the melted chocolate. Add jaggery and stir until fully incorporated. Fold in cranberries, blueberries, and walnuts.

  5. Set & Cut: Transfer the mixture to the prepared tray, pressing firmly into an even layer. Top with extra berries/nuts. Chill until set, then cut into 12 rectangular bars.
