These soft, gooey Apple Cinnamon Banana Flour Cookies combine the natural sweetness of apple purée with warm cinnamon, all bound together by Nihkan’s Green Banana Flour and oats. Perfect for a quick tea‑time snack or an on‑the‑go treat, they’re gluten‑free, egg‑free, and ready in under 30 minutes.

Ingredients:

  • 40 g (¼ cup) Nihkan Green Banana Flour

  • 40 g (¼ cup) oats flour

  • 2 Tbsp apple purée (from ½ apple + 2 Tbsp sugar)

  • 50 g oil

  • 30 g water

  • ¼ tsp baking powder

  • ⅛ tsp baking soda

  • 1 tsp cinnamon powder

Directions:

  1. Preheat oven to 180 °C (350 °F) and grease or line a baking tray.

  2. In a bowl, whisk together oil and water until emulsified.

  3. Sift in green banana flour, oats flour, baking powder, baking soda, and cinnamon.

  4. Stir in the apple purée until a slightly gooey dough forms.

  5. Using a scoop or spoon, portion dough into 8 balls and flatten gently on the tray.

  6. Bake for 20 minutes, until edges are set and tops show a light golden hue.

  7. Allow cookies to cool fully on the tray to develop crispness.
