These Instant Appams are a nourishing South Indian delicacy made healthier and easier with Nihkan’s Sprouted Super Legume Mix Flour. Perfectly soft and fluffy with a mild fermented flavor, these appams require no overnight soaking or fermenting, making them a quick and protein-rich breakfast or dinner option. Pair them with coconut chutney, vegetable stew, or sambhar for a wholesome meal.
Ingredients:

½ cup Nihkan’s Sprouted Super Legume Mix Flour

½ cup rice flour
-
¼ cup thick coconut milk
-
1 tsp active dry yeast (optional for fermentation)

1 tsp sugar
-
¼ tsp salt
-
Warm water as needed for batter

Oil for greasing the pan
Directions:

In a bowl, mix sprouted legume flour, rice flour, sugar, and salt.

Add coconut milk and warm water gradually to make a smooth batter.

Add yeast if fermenting (optional) and let it sit for 30 mins.

Heat an appam pan or non-stick kadai and lightly grease with oil.

Pour a ladle of batter into the center and rotate the pan to spread.

Cover and cook on low flame till the edges are crisp and the center is cooked through.

Serve hot with stew, chutney, or sambhar.
