These Potato Fritters with Buckwheat Flour are a nourishing, crunchy, and gluten-free take on classic Indian pakoras. Perfect for fasting days or evening snacks, this recipe uses Nihkan’s Buckwheat Flour, which is rich in fiber, plant protein, and essential minerals. These fritters are crispy on the outside and soft inside—best enjoyed hot with mint chutney or ketchup.

Ingredients:

  • ½ cup Nihkan’s Buckwheat Flour

  • 2 medium-sized potatoes (peeled & grated or thinly sliced)

  • 1–2 green chilies (finely chopped)

  • 1 tsp ginger paste

  • ½ tsp rock salt or regular salt

  • ¼ tsp black pepper

  • 1 tbsp chopped coriander leaves

  • 2–3 tbsp water (as required)

  • Oil for shallow or deep frying

Directions:

  1. In a mixing bowl, combine grated or sliced potatoes with ginger paste, green chilies, coriander, salt, and pepper.

  2. Add Nihkan’s Buckwheat Flour and mix well.

  3. Add water gradually to form a thick batter-like consistency that holds the potatoes together.

  4. Heat oil in a pan. Drop small portions of the mixture into the hot oil and fry until golden and crisp.

  5. Remove on absorbent paper and serve hot.

Serving Size: Makes approx. 10–12 fritters
