This Sprouts Bhelpuri Chaat is a tangy, crunchy, and nutritious twist to the classic Indian street food, made using Nihkan's Dehydrated Sprouted Mung Beans. It combines the crunch of puffed rice, the freshness of vegetables, and the wholesome power of sprouted legumes in one vibrant bowl.
Ingredients:

½ cup Nihkan’s Dehydrated Sprouted Mung Beans

1 cup puffed rice (murmura)

1 small onion, finely chopped

1 small tomato, finely chopped

1 small cucumber, finely chopped

1 green chili, finely chopped (optional)

1 tbsp coriander leaves, finely chopped

1 tbsp lemon juice
-
½ tsp chaat masala
-
1–2 tbsp green chutney (mint-coriander)

1–2 tbsp tamarind chutney

Salt to taste

Optional: Sev or roasted peanuts for garnish
Directions:

Rehydrate the sprouted mung beans by soaking in hot water for 10–15 minutes. Drain and allow to cool.

In a large mixing bowl, combine puffed rice, onion, tomato, cucumber, and green chili.

Add the rehydrated mung beans.

Mix in green chutney, tamarind chutney, lemon juice, salt, and chaat masala.

Toss well to combine.

Garnish with coriander leaves and optional sev or peanuts. Serve immediately for the best crunch.
