Healthy Gluten Free Chocolate chunks Muffins

Ingredients

  • 1 cup of NihKan’s Millets Baking Mix
  • 1/4 cup of oil
  • 1/3 cup granulated brown sugar
  • 1/4 cup cocoa powder
  • 1/2 tsp of salt
  • butter milk – 1/3 cup milk (or alternatives) + 2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 1/4 cup hot water
  • Add dark chocolate chunks

Instructions

  1. Take all wet ingredients – oil, powdered sugar, butter milk, vanilla extract . Mix all well.
  2. Add all dry ingredients – Baking Mix flour. cocoa powder
  3. You can add hot water to adjust consistency.
  4. Add some chocolate chips. Mix evenly. Use folding batter method.
  5. Pour the batter into greased muffin tins. Top them up with more chocolate chunks.
  6. Bake in preheated oven at 180 degree C for 25-30 mins.
