Millet Vegetable Tortillas Parathas – Gluten‑Free Indian Flatbreads
These colorful, gluten‑free Millet Vegetable Tortillas Parathas are made with NIHKAN’s All Purpose Millets Mix and loaded with your choice of vegetables. High in fiber and naturally processed, they make an excellent Indian flatbread for breakfast, lunch, or a healthy snack. Serve hot with yogurt, chutney, or your favorite dip.
Ingredients

1 cup NIHKAN All Purpose Millets Mix

1 tsp salt

¼ tsp black pepper

¼ tsp cumin powder

¼ tsp coriander powder

¼ tsp red chilli powder

½ cup blanched spinach, fenugreek or cabbage, grated carrot, or mixed veggies

½ cup warm water (more as needed)

1 tsp oil (for cooking)

Olive oil or butter (for sauté)
Directions

In a bowl, combine millets mix, salt, pepper, cumin, coriander, and chilli powders.

Stir in the blanched vegetables until evenly coated.

Gradually add warm water and knead into a soft, pliable dough.

Divide dough into 4–5 balls; roll each into a tortilla‑sized circle.

Heat a skillet and brush with oil. Cook each paratha 1–2 min per side until golden and cooked through.

Optionally sauté in a little olive oil or butter for extra crispness. Serve hot.
Tip: To keep these tortillas softer for longer, add 4 g psyllium husk to the flour when kneading.
