Start your day on a delicious note with these fluffy Banana & Chia Seeds Pancakes made using NIHKAN's Pancake & Waffle Mix. This easy, gluten-free recipe combines the natural sweetness of bananas with the crunch of chia seeds and the goodness of yogurt, making it a perfect choice for a wholesome breakfast.

Ingredients

  • 1/3 cup NIHKAN green banana flour Pancake mix

  • 1/4 tsp ground cinnamon

  • 1 egg, lightly beaten (optional)

  • 1/2 cup milk or substitute

  • 1/4 cup yogurt

  • 1/2 tsp vanilla extract

  • 1 tbsp chia seeds

  • 1 tbsp sugar/honey or substitute

  • 1 tsp oil or butter (plus more for frying)

  • 2 mashed bananas

  • Maple syrup, fresh fruit, almonds (optional for topping)

Directions

  1. Mix butter, honey, milk, yogurt, egg, vanilla extract, cinnamon, and chia seeds in a bowl and let sit for 5 minutes.

  2. Add pancake mix and mashed bananas to the bowl.

  3. Heat a frying pan with oil or butter, then reduce heat to medium.

  4. Pour 1/4 cup batter for each pancake and cover. Flip once edges turn golden (2–3 mins), then cook the other side for another minute.

  5. Serve hot with syrup and fruit toppings.
