1/3 cup NIHKAN green banana flour Pancake mix

1/4 tsp ground cinnamon

1 egg, lightly beaten (optional)

1/2 cup milk or substitute

1/4 cup yogurt

1/2 tsp vanilla extract

1 tbsp chia seeds

1 tbsp sugar/honey or substitute

1 tsp oil or butter (plus more for frying)

2 mashed bananas

Maple syrup, fresh fruit, almonds (optional for topping)
Directions

Mix butter, honey, milk, yogurt, egg, vanilla extract, cinnamon, and chia seeds in a bowl and let sit for 5 minutes.

Add pancake mix and mashed bananas to the bowl.

Heat a frying pan with oil or butter, then reduce heat to medium.

Pour 1/4 cup batter for each pancake and cover. Flip once edges turn golden (2–3 mins), then cook the other side for another minute.
