Made with NIHKAN’s gluten-free pancake mix, these fluffy chocolate-and-coffee flavored pancakes are layered with a special cocoa sprinkle, making them the perfect guilt-free treat for mornings, brunch, or even dessert.
Ingredients

1/3 cup NIHKAN Green Banana Flour Pancake Mix

1 tbsp sugar or substitute

1 tbsp cocoa powder

1 tsp espresso/instant coffee powder

A pinch of salt

2 egg whites (or flax egg for vegan version)

1 tbsp full-fat cream or coconut cream (optional, for true tiramisu flavor)

1/4 cup milk or milk substitute
For the Tiramisu Topping (Optional):

1 tbsp dark cocoa powder

1 tbsp baking cocoa powder

2 tbsp granulated sugar
Directions

In a bowl, mix all dry ingredients – pancake mix, cocoa, espresso, salt.

Add in egg whites and cream. Mix well.

Gradually add milk until a thick batter is formed. Let it rest for a few minutes.

Heat a pan over medium heat with butter/oil. Pour 1/4 cup batter per pancake.

Cook until edges are golden (2–3 mins), flip, and cook the other side for 1–2 mins.

Sprinkle tiramisu topping and optionally layer with cream before serving.
