Ingredients

1/3 cup NIHKAN Green Banana Flour Pancake Mix

1 large sweet potato, peeled and spiralized

1/2 cup chopped spring onions

2 eggs, beaten (optional for vegan)

2 cloves garlic, crushed

1/2 tsp salt

1/2 tsp black pepper

2 tsp olive oil
Directions

Peel and spiralize the sweet potato. Cut into 5-inch strands.

In a bowl, combine pancake mix, sweet potato, onions, eggs (if using), garlic, salt, and pepper. Add a little water or milk if the batter is too thick.

Heat a non-stick pan over medium-low heat.

Pour in the mixture to form 4 small pancakes.

Cook until golden brown on the bottom (about 3 mins), then flip and press gently to flatten. Cook for another 3 mins until crisp.

Serve hot with sour cream or dip of your choice.
