Ingredients
For the Pancakes:

1 cup NIHKAN Green Banana Flour Pancake Mix

1 cup water

2 tbsp olive oil

1/4 tsp cumin

1/4 tsp sea salt
For the Roasted Carrots:

6–8 carrots, peeled and sliced

2 tbsp olive oil

1/2 tsp smoked paprika

Salt, pepper, cumin, cinnamon (to taste)
Optional Toppings:

Directions

Toss carrots with olive oil and spices. Roast at 200°C for 15–18 minutes until browned but firm.

In a bowl, whisk together pancake mix, water, olive oil, cumin, and salt to make a smooth batter.

Heat a skillet over medium heat with a little oil. Pour 1/4 cup batter per pancake and cook until edges are golden, about 5–6 minutes. Flip and cook another 4–5 minutes.

Top each pancake with Greek yogurt, microgreens, and a spoonful of roasted carrots.

Serve immediately for best taste and texture.
