Roasted Carrot Savory Pancakes – Healthy Gluten-Free Meal

A colorful and nutritious twist to traditional pancakes, these Roasted Carrot Savory Pancakes combine the wholesome power of NIHKAN’s Green Banana Flour Pancake Mix with spiced roasted carrots and creamy yogurt. They’re naturally gluten-free, rich in fiber, and perfect for a hearty brunch or light lunch.

Ingredients
For the Pancakes:

  • 1 cup NIHKAN Green Banana Flour Pancake Mix

  • 1 cup water

  • 2 tbsp olive oil

  • 1/4 tsp cumin

  • 1/4 tsp sea salt

For the Roasted Carrots:

  • 6–8 carrots, peeled and sliced

  • 2 tbsp olive oil

  • 1/2 tsp smoked paprika

  • Salt, pepper, cumin, cinnamon (to taste)

Optional Toppings:

  • Greek yogurt

  • Microgreens

Directions

  1. Toss carrots with olive oil and spices. Roast at 200°C for 15–18 minutes until browned but firm.

  2. In a bowl, whisk together pancake mix, water, olive oil, cumin, and salt to make a smooth batter.

  3. Heat a skillet over medium heat with a little oil. Pour 1/4 cup batter per pancake and cook until edges are golden, about 5–6 minutes. Flip and cook another 4–5 minutes.

  4. Top each pancake with Greek yogurt, microgreens, and a spoonful of roasted carrots.

  5. Serve immediately for best taste and texture.
