Gingerbread Pancakes – Warm Spiced Gluten-Free Breakfast Recipe

These cozy and comforting Gingerbread Pancakes are made with NIHKAN’s Green Banana Flour Pancake Mix and are naturally gluten-free. Flavored with ginger, cinnamon, and a hint of vanilla, they bring the holiday warmth to your breakfast plate all year round. Perfect for kids and adults alike, these pancakes are quick, healthy, and packed with warming spices.

Ingredients

  • 1/3 cup (45g) NIHKAN Green Banana Flour Pancake Mix

  • 1 tbsp sugar or substitute

  • 1 tbsp cocoa powder

  • 1 tsp espresso/instant coffee powder

  • A pinch of salt

  • 2 egg whites (or 1 flax egg for vegan option)

  • 1 tbsp full-fat cream or coconut cream (optional)

  • 1/4 cup milk or milk substitute

Directions

  1. In a mixing bowl, combine all the ingredients to form a smooth batter.

  2. Preheat a non-stick pan over low-medium heat and grease with oil or butter.

  3. Pour 1/4 cup of batter onto the pan.

  4. Cook until bubbles appear and edges begin to brown. Flip and cook the other side for another 1–2 minutes.

  5. Serve warm topped with syrup and powdered sugar for the classic gingerbread look.
