Millets Christmas Fruit Cake with Millets Baking Mix
Celebrate the festive season with this healthy and delicious Millets Christmas Fruit Cake made using Nihkan’s Millets Baking Mix. Rich in dried fruits, naturally sweetened, and bursting with warm spices, this wholesome cake is gluten-free, refined sugar-free, and perfect for holiday gifting or indulgence.
Ingredients:

1½ cups Nihkan’s Millets Baking Mix

½ cup mixed dry fruits (raisins, cranberries, chopped dates)

2 tbsp orange zest

1 tbsp lemon zest
-
½ tsp cinnamon powder
-
¼ tsp nutmeg powder

¼ tsp clove powder
-
½ cup jaggery powder or coconut sugar

¼ cup coconut oil or olive oil

1 tbsp apple cider vinegar or lemon juice
-
1 tsp vanilla extract
-
1 cup plant-based milk (almond, oat, or soy)

Directions:

Preheat oven to 180°C and grease a loaf or cake tin.

Soak dry fruits in warm water for 15 minutes, then drain.

In a mixing bowl, combine Millets Baking Mix, spices, and jaggery.

In another bowl, whisk plant-based milk, oil, lemon juice, and vanilla extract.

Combine wet and dry ingredients. Add soaked fruits and mix well.

Pour the batter into the prepared tin, level it, and top with chopped nuts.

Bake for 35–40 minutes or until a toothpick inserted comes out clean.

Cool before slicing. Store in an airtight container.
