Healthy Vegan Chocolate Cake Using Millet Baking Mix

This Healthy Vegan Chocolate Cake is every chocolate lover's dream with none of the guilt! Made using Nihkan’s Millet Baking Mix, this cake is soft, moist, and deliciously chocolaty while being gluten-free, eggless, and refined sugar-free. It’s the perfect healthy bake for birthdays, brunches, or just a self-love moment.

Ingredients:

  • 1½ cups Nihkan’s Millet Baking Mix

  • ½ cup cocoa powder

  • ½ tsp baking soda

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup jaggery powder or coconut sugar

  • ¼ cup oil (coconut or olive oil)

  • 1 cup plant-based milk (almond, oat, or soy)

  • 1 tbsp lemon juice or apple cider vinegar

  • 1 tsp vanilla extract

  • Optional: Vegan chocolate chips or nuts for topping

Directions:

  1. Preheat oven to 180°C. Grease and line a cake pan.

  2. In a large bowl, sift together millet baking mix, cocoa powder, baking soda, baking powder, salt, and jaggery.

  3. In a separate bowl, mix milk, lemon juice, oil, and vanilla extract.

  4. Combine the wet and dry ingredients to form a smooth batter.

  5. Pour into the cake pan and bake for 30–35 minutes or until a toothpick comes out clean.

  6. Cool completely before slicing.

  7. Optional: Top with vegan ganache or fruit.
