Masala Chai Millet Tea Cake Made with Millets Baking Mix

Infused with the warm spices of Indian masala chai, this Masala Chai Millet Tea Cake is a healthy and flavorful treat made using Nihkan’s Millets Baking Mix. Perfect for pairing with your evening tea or as a wholesome dessert, this cake is rich in fiber, gluten-free, and low in refined sugars.

Ingredients:

  • 1½ cups Nihkan’s Millets Baking Mix

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ cup jaggery powder

  • ¼ tsp salt

  • 1 tsp cinnamon powder

  • 1 tsp ginger powder

  • ½ tsp cardamom powder

  • 1 tbsp tea leaves (boiled and strained)

  • ½ cup almond or oat milk (or dairy milk of choice)

  • ¼ cup oil or ghee

  • 1 tbsp apple cider vinegar

  • ½ tsp vanilla extract (optional)

Directions:

  1. Preheat the oven to 180°C and grease a loaf pan.

  2. In a mixing bowl, combine all dry ingredients.

  3. Add the strained chai, milk, oil/ghee, vinegar, and vanilla extract.

  4. Mix into a smooth batter without lumps.

  5. Pour into the greased pan and tap to remove air bubbles.

  6. Bake for 25–30 minutes or until a toothpick comes out clean.

  7. Let cool before slicing. Enjoy warm or at room temperature.
