Millet Chocolate and Strawberry Loaf Cake Made with Millets Baking Mix
This Millet Chocolate and Strawberry Loaf Cake is a wholesome dessert packed with the richness of cocoa and the sweetness of fresh strawberries. Made using Nihkan’s Millets Baking Mix, this gluten-free loaf cake is a nourishing alternative to traditional desserts, ideal for snacking, gifting, or pairing with a warm beverage.
Ingredients:

1½ cups Nihkan’s Millets Baking Mix

½ tsp baking soda

½ tsp baking powder
-
2 tbsp cocoa powder
-
¼ tsp salt
-
½ cup jaggery powder or coconut sugar

¼ cup oil or ghee
-
½ cup almond/oat/dairy milk
-
½ tsp vanilla extract
-
1 tbsp apple cider vinegar or lemon juice
-
⅓ cup chopped fresh strawberries

Optional: dark chocolate chips or chopped walnuts for topping
Directions:

Preheat oven to 180°C and grease a loaf tin.

In a mixing bowl, combine dry ingredients including baking mix, cocoa powder, salt, and sweetener.

Add wet ingredients: milk, oil/ghee, vinegar, and vanilla extract.

Fold in strawberries. Mix well to get a smooth batter.

Pour into the loaf tin and optionally top with dark chocolate chips or nuts.

Bake for 30–35 minutes or until a skewer comes out clean.
