Millet Chocolate and Strawberry Loaf Cake Made with Millets Baking Mix

This Millet Chocolate and Strawberry Loaf Cake is a wholesome dessert packed with the richness of cocoa and the sweetness of fresh strawberries. Made using Nihkan’s Millets Baking Mix, this gluten-free loaf cake is a nourishing alternative to traditional desserts, ideal for snacking, gifting, or pairing with a warm beverage.

Ingredients:

  • 1½ cups Nihkan’s Millets Baking Mix

  • ½ tsp baking soda

  • ½ tsp baking powder

  • 2 tbsp cocoa powder

  • ¼ tsp salt

  • ½ cup jaggery powder or coconut sugar

  • ¼ cup oil or ghee

  • ½ cup almond/oat/dairy milk

  • ½ tsp vanilla extract

  • 1 tbsp apple cider vinegar or lemon juice

  • ⅓ cup chopped fresh strawberries

  • Optional: dark chocolate chips or chopped walnuts for topping

Directions:

  1. Preheat oven to 180°C and grease a loaf tin.

  2. In a mixing bowl, combine dry ingredients including baking mix, cocoa powder, salt, and sweetener.

  3. Add wet ingredients: milk, oil/ghee, vinegar, and vanilla extract.

  4. Fold in strawberries. Mix well to get a smooth batter.

  5. Pour into the loaf tin and optionally top with dark chocolate chips or nuts.

  6. Bake for 30–35 minutes or until a skewer comes out clean.

  7. Let it cool before slicing. Enjoy as a dessert or healthy snack.
